I used to use a rice cooker for cooking brown rice. But it was plastic and when it stopped working I wanted an easy way to cook rice without using plastic. I tried the pot cookers but the rice tended to boil up and spew foam out the edges of the lid, making for a nice clean-up job.
Here's a simple method that uses a large stainless steel potwith steamer insertand a Pyrex bowl.
Wash 1 cup of brown rice (put in a strainer and rinse). Drain. Place rice in the pyrex bowl. Add 1-1/3 cup of water to the bowl. The water can be room temp.Set the bowl with its rice in the steamer insert.
Puttwo inches or less of water in the pot, bring it to a boil, lower heat tillthe waterjust simmers. Place the insert onto the pot. Cover the pot with its lid. (You willNot use the pyrex lid except to store the rice later.)
Continue to simmer for 45-50 minutes. (Set a timer so you don't forget!)
That's it! Your rice will turn out perfect.
Instead of water you can use a pint of stewed tomatoes or use chicken broth and add a few veggies or add similar flavorings.
You can use the rice as is, or eat with milk, sugar, cinnamon, or you can add it to recipes. I like to keep cold rice on hand in the fridge for use in recipes. You can also freeze it for later use.
